Corn and Flour Tortillas
- 1 cup flour
- 1⁄2 cup cornmeal
- 1 1⁄2 cups cold water
- 1 large onion, chopped
- 4 green onions, chopped
- 1 egg, well beaten
- Combine flour and cornmeal in a medium bowl. Add water and egg; beat until smooth.
- Spoon 3 tbsp. (45 mL) batter onto a hot, ungreased griddle or crêpe pan and make a very thin
6” (15 cm) pancake. Turn tortilla when edges begin to brown and cook on the other side. Keep
warm in a covered pan until ready to serve.
- Makes 8-10 tortillas.
- Note: Tortillas may be made ahead and frozen until ready to use. Place a layer of wax paper
between tortillas to keep them separated.
